(Washington, DC) As business conditions constantly change, up-to-date tools for maintaining the success of a business are vital. The National Restaurant Association today released its Restaurant Industry Operations Report 2002, an annual survey that provides information on typical operational costs, including the percentage of sales allocated to employment benefits, food-and-drink purchases, services and more.
"The Restaurant Industry Operations Report is designed for restaurateurs who wish to compare their business to others with a similar business profile," said Steven C. Anderson, the Association's president and chief executive officer. "It summarizes typical operational costs of restaurants across the country, and is a helpful tool for any restaurateur to efficiently run his or her establishment."
The survey analyzes restaurant-operator income statements based on information collected from nearly 700 restaurants nationwide. It includes data on sales, gross profits, operating expenses, seat turnover, employees per seat, pre-tax income and much more. The results are expressed as amounts per seat and as ratios to total sales, the most common bases used in the industry, as well as by location, menu theme, affiliation and sales volume. Individuals who purchase the national report will also receive a report specific to the region in which their restaurant is located.
The survey was prepared in cooperation with the accounting firm Deloitte & Touche and contains detailed information on tableservice establishments with three different check-size averages, and limited-service operations.
